During his stay at Trader Vic’s, Okon was trained by Chef John Lui until he became executive sous chef. Shortly after, he moved on to Nikkolia’s Roof for further training by seasoned French master Chef Marc Benoid along with AAT Culinary Arts at Gwinnett Tech for food preparation and management development, to help earn his diploma for food service management in the hotel and motel industry.
He has been trained to cook diverse dishes that are famous around the globe. At the Atlanta Hilton & Towers, he prepared American food, while at the Terrace Garden restaurant, he prepared Southern cuisine.
James received extensive training at T.H. Hamilton Management School for Piccadilly managers and assumed an assistant general manager position at the Travel Center of America after completing his management training program.
